Sandvik 19C27 is a cutlery steel manufactured by Sanvik Materials Technology in Sweden. Designed as a high-carbon course-grained steel, it takes on very high hardness at a range of 55-63 HRC. It is not often seen in knives but does appear in various sporting and kitchen knives from several European brands.
It does not have high corrosion resistance, so Sandvik recommends some sort of blade coating. The coarser grain structure allows it to excel at cutting tougher or abrasive materials.
